Shifting the aroma wheel
Not much excitement this week. I got Champagne, Cava, Cremant de Bourgogne and Proseco to complete my tasting notes of Unit 5. Old Proseco is always playing with the geranium planters box. It's suppose to appear only with old bottles but I get it all the time. The geranium alley in the garden where I was playing as a kid might have something to do with it.
Paul Georg, Blanc de Blanc 1er cru caught my attention. The nose was stopping exactly where the palate was picking up. I wrote "The nose is showing quince, yellow apple, brioche and some burnt orange peel" and for the palate "The apples are now baked, the autolytic gets closer to the toast and golden raisins are appearing on the finish". A fascinating mutation, close to having the producer showing you the aroma wheel and then shifting it for educational purpose.
